Tagines are perfect for cooking because you don't need to use much liquid. The cone-shaped top allows all condensation to drip back into the base created a succulent, natural sauce. Therefore, it is important that the lid stay on the tagine the entire cooking time. Opening the tagine while cooking will allow the steam to escape and could result in dry or even burned food.
