I tried this delicious concoction one night as I was rushing to throw some dinner together and needed to use what was left in the fridge. The key to this recipe is to make sure your eggs are very buttery, soft, and highly seasoned so they don't disappear among the other toppings! This recipe is very adaptable to your personal tastes, but you want a balance of ingredients that don't overwhelm the delicate eggs. Let them be the star.

Made as written minus the sour cream (personal preference) and these turned out pretty good. The possibilities are endless really. I do think the cheese would have been better sprinkled over the top of the nachos instead of inside the egg but that is just my opinion. This was fun and one I will make again. Read More

Hi! I am the poster of this recipe and I just wanted to say that my family and friends have really enjoyed it. It's one of my favorite meals to make because it's so easy and adaptable to whatever "food mood" you are in (hot and spicy mellow and creamy etc.). I hope your family enjoys this recipe as much as mine does:) Read More
