I cobbled this recipe together from a myriad of online recipes. I couldn't find a more veggie-friendly option, and had BBQ sauce in the fridge. This is a kiddo and grandkid-friendly recipe you can whip up for an in-a-pinch meal... or add it to your regular menu rotation and get those veggies in without a struggle!

  • Place lentils in a small pot and cover with 2 cups hot water. Bring to a boil; reduce heat and simmer until lentils are tender, about 15 minutes. Drain.

  • Heat a large nonstick skillet over medium heat. Add onions; cook and stir until softened, 3 to 5 minutes. Add ground beef and green bell pepper; cook and stir until browned, about 8 minutes.

  • Stir drained lentils, ketchup, barbeque sauce, Worcestershire sauce, and minced garlic into the skillet. Reduce heat to low and simmer until flavors combine and mixture thickens to desired consistency, 15 to 20 minutes.

Cook's Note:

Use homemade or store-bought barbeque sauce.

This sounds good but when I first read the description that included 'vegetable protein' I thought it would include some TVP textured vegetable protein. I think I'll try it without the ground beef and make it a vegetarian meal. There is a Morning Star Farms TVP that has chipotle flavor which I think would be terrific. I made this recipe just as written for Superbowl Sunday! It was great!!! I will definitely make it again and again! The less meat we eat, the more food there is worldwide for those in hunger. We feed animals 7 times the grain it takes for their meat. That is a waste of our resources. That grain could feed millions of people living in poverty and starvation. I'm thinking of making this with the lentils (doubled) only and no hamburger. I think it will taste just as good!!! Sorry no picture! We ate it all before I got the chance! Read More
