This is a great salad to use up leftover ham, turkey, or chicken. I sometimes don't even wait for the meat to be leftover!

  • In a large bowl, whisk together the mayonnaise and orange juice. Add ham, red apples, yellow apples and celery and toss until thoroughly coated, to ensure that the apples do not brown. Chill 4 hours or overnight.

  • Just before serving, toss in parsley. Serve on a bed of lettuce. NOTE: You may also add 1/2 cup halved seedless grapes, raisins, sunflower seeds or walnut halves.

I made this using regular mayo and Jazz apples and I didn't add parsley. I added walnuts grapes and golden raisins. The dressing for this salad is too liquidy for my taste. I wondered how it would be to use orange juice concentrate instead of the juice. How can you go too wrong with the ingredients?! Thanks Vicki Pierce! Read More
