  • Mix first 5 ingredients in food processor or blender. Process on high until pureed (mixture will not be smooth). Transfer to large food storage bag. Add thawed shrimp; seal bag. Massage bag to coat shrimp. Refrigerate 1 to 2 hours to marinate.

  • Heat grill. Thread shrimp and remaining ingredients on skewers. Grill 5 to 7 minutes until shrimp are opaque and cooked through, turning once or twice.

I love this recipe just as it s written! We only thread shrimp though and double the recipe. I usually roast peppers onions and new potatoes in the oven to serve with it and will throw some sliced pineapple along side the shrimp on the grill. When friends come over they don t last long! Absolutely delicious! Read More

I made it as written except I used the zest of a lemon instead of a lime because I was out of limes. I also made lime rice and fresh salsa with it. The whole family enjoyed it! Read More

I love coconut and this recipe is very good. I did make an adjustment by subbing the jalapeño pepper for roasted red peppers and adding a dash or two of cayenne pepper. I just didn’t have jalapeños on hand. I’ve made it twice for guests and everyone loved it. I had jumbo shrimp and marinated it for 4 hours. The shrimp did not get mushy that long in the marinade.
