My chicken burrito bowl features chicken, Knorr(R) Rice Sides(TM), black beans, cheese and fresh pico de gallo!

Directions

  • Heat 2 tablespoon olive oil over medium high heat; add onions and cook and stir until they start to soften, 3 or 4 minutes.

  • Season diced chicken with 1 teaspoon of kosher salt. Add chicken to pan and cook over medium high heat until chicken has started to brown, about 5 minutes. Remove chicken from pan.

  • Use remaining 1 tablespoon olive oil to prepare Knorr(R) rice sides(TM) as directed on package. Stir in cooked chicken, black beans .and Monterrey jack cheese; heat through. Top with fresh pico de gallo.

This was great! Very versatile my boys put it into a tortilla for a burrito I put it on a bed of lettuce for 'cantina bowl salad' and my husband just ate it as a bowl. I did add corn and put a cilantro lime vinaigrette on top I also use farmhouse mexican rice instead of knor I'm sure there was no difference made because of that. The Cilantro and the Pico de Gallo is a must! Read More

My boys reall liked this dish! I followed directions exactly. Topped it with fresh cilantro salsa and guacamole. Served it with warmed low-carb tortillas on the side. It tasted healthy not too salty. Yum! Read More
