I used to make this all the time out of my Betty Crocker cookbook before my husband and I were married. It was one of our favorites. The chorizo can be really salty(which I forgot about), so you can just do ground beef with taco seasoning. Tonight I switched out the Pepper Jack and used Colby Jack, and left out the chilis so it wouldn't be too spicy for my kids. If it were just the hubby and me, I would make it as written except maybe use taco meat instead. Awesome!
