  • Combine beef, diced onion, and garlic in a large skillet; cook and stir until beef is no longer pink, 5 to 8 minutes. Season with salt.

  • Transfer beef to a saucepan over low heat. Add 3/4 cup Cheddar cheese, mozzarella cheese, and milk. Cook and stir until cheese is melted, 3 to 5 minutes.

  • Melt half the butter in a large skillet over medium heat. Cook 1 tortilla until golden brown on the bottom, about 3 minutes. Flip tortilla and spread with 1 tablespoon dressing. Spoon half of the beef mixture over the tortilla; fold in half. Cook until tortilla is golden brown, 1 to 2 minutes per side. Transfer to a serving plate. Repeat with second tortilla.

  • Sprinkle remaining 1/4 cup Cheddar cheese over tortillas. Let cool, about 5 minutes. Cut into wedges and serve with lettuce, tomato, and sliced onion.

Delicious! I used sweet onion in place of the red and added in a bit of green pepper that I had to use up. The beauty of this recipe is that you can put anything in it! I'm a cheeseburger lover, and this rated right up there with the traditional one. Next time, the family wants me to add bacon. This is a definite keeper...YUM! Thanks for sharing. :) Read More

This was really good and was a nice change up from the standard cheeseburger. I did find it took about 4 tablespoons of milk though, but that really wasn’t an issue, just a personal preference, as I like my “cheese sauce” gooey. My 1000 Island dressing was homemade (mayo, ketchup, sweet salad cubes & a bit of Sweet ‘n Low to take the twang off). When finished, I topped them with shredded lettuce, chopped tomatoes & a dollop of sour cream, along with a side dressing of salsa (in case you wanted to dip them).
