  1. Cook ground chicken in a large skillet over medium heat, stirring constantly to break it into small crumbles, about 5 minutes. Stir in peanuts, red pepper flakes, ginger, and salt. Add lime juice and fish sauce. Cook, stirring occasionally, until liquid evaporates and chicken appears dry, about 10 minutes.
  2. Transfer chicken mixture to a large bowl. Fold in mint, basil, and cilantro. Spoon mixture into individual butter lettuce leaves and top with cucumber.

Made as written and this was pretty good. My husband found the mint to be a bit overwhelming and I found the same to be true with the basil. So on that note I would use less of each next time bu...

I would cut the lime juice in half and the crushed red pepper by 2/3. Overall it’s a good recipe and easy to make.

Delicious way to use ground chicken! We stuffed it in pitas, topping with bleu cheese and sautéed onions and mushrooms. The sweet/tangy flavor from the lime juice was great.
