"This tasty vegetarian chili has a unique ingredient, pumpkin. It doesn't affect the taste but does add plenty of vitamins and fiber to the recipe. If desired, serve with shredded Cheddar cheese. Note it is very spicy!"

  1. Combine pumpkin puree, kidney beans, garbanzo beans, black beans, corn, diced tomatoes, onion, jalapeno peppers, oregano, garlic powder, and cayenne in a large pot. Simmer over medium heat, about 40 minutes.
  2. Stir water, chili powder, cumin, black pepper, and salt into the pot. Reduce heat to low, cover, and simmer until flavors combine, about 20 minutes.

I halved the recipe and it still made quite a bit. It is very spicy, adjust to personal taste, I omitted the jalapeno and would reduce the cayenne next time. I replaced the garbanzo beans with v...
