Not happy with any at-home recipes for nacho sauce, I made up my own! A thick, creamy nacho cheese sauce that you will swear came out of a jar. Cheesy, subtly spicy, and bursting with nacho flavor--it rivals any store-bought nacho cheese sauce. Just be sure to save some aside for yourself! Serve warm immediately over or with tortilla chips, on tacos or burritos, or as any other dip.

  • Heat oil in a saucepan over medium-high heat. Whisk in flour to form a thick paste. Whisk in 3/4 cup milk; cook and stir until thickened, 3 to 4 minutes.

  • Stir Cheddar cheese, cream cheese, and sour cream into milk mixture until smooth, about 1 minute. Add remaining milk, diced tomatoes, chili powder, cumin, and paprika; cook and stir until thickened to sauce consistency, about 5 minutes more. Season with salt and pepper.

The spices in this recipe were phenomenal!! I know I hate reviews where they don't make the recipe per directions/ingredients, however I had forgotten to add the cream cheese and sour cream since I was going by memory..ugh. I really wanted to follow the ingredients. BUT, it still tasted extraordinary without those two ingredients because the spices were so good! I did add a lot of milk which made it thinner so it's easier to pour over the chips (maybe the cream cheese and sour cream would've done just the same, but tasted more creamier?) . I loved the review of someone saying they added salsa to theirs instead of Rotel tomatoes because I, too, don't have Rotel handy, but I did have salsa! The salsa was really good in it. I just added a few tablespoons. Very great recipe and next time I will do it the way it's written and I'm sure it will still taste 5-star worthy! :) Thanks for this recipe! Read More

We LOVED this dip! I do not keep Rotel(R) on hand as we really don't care that much for it so I used salsa instead which worked perfectly. This is a definite keeper YUM! Thanks for sharing.:) Read More

I was looking for something different from my standard melted "cheese product" plus Rotel to make for nachos supreme. This is SO lick-the-spoon good! Only change I made was I used butter instead of veg. oil. It makes a lot - which is great for a party but next time I make it for the family I will half the recipe. Turned out so good. Very easy to make. I made 1/2 the recipe and there's still a lot left!! The only substitute I made were to things I had on hand-I subbed Neufchâtel for cream cheese plain yogurt for sour cream and the habanero Rotel. So yummy I will def make again! Read More

This was a big hit with me and the kiddos! I used diced green chiles instead of the Rotel (what I had on hand) and left out the black pepper (because black pepper doesn't belong in everything). It was super quick and easy to make and really satisfied my nacho craving! Read More
