Ingredients

  • 4 ears corn on the cob, shucked

  • 1 tablespoon peanut oil, or as needed

  • Salt to taste

  • 3 tablespoons fresh mayonnaise

  • 4 teaspoons guajillo chile powder

  • 1 lime

  • 1 cup crumbled cotija cheese

Directions

  1. Rub corn with oil and season with salt.

  2. Cook corn over an open fire grill or wood oven for 8 to 10 minutes.

  3. Remove from grill and rub with the mayonnaise; season with guajillo powder (molido). Place corn back on grill or oven for 2 minutes.

  4. Remove from heat, squeeze lime juice over corn then top with cojita cheese. Serve immediately.
