  • Cook ground chicken and onion in a heavy pot over medium heat until no longer pink and onions begin to turn translucent, about 6 minutes. Drain excess fat. Stir in garlic and chili powder until chicken is coated and fragrant, 1 minute. Transfer chicken and onion mixture to a bowl.

When the rice is cooked and tender, add the ground chicken, diced tomatoes and green chilies, and refried bean to the rice. Stir until heated through, about 4 minutes. This was thick spicy and good. While cooking I wasn't too sure about how it was going to turn out--with the refried beans it seemed so thick but it all came together well. The cheese and cilantro really added to the flavor. I added some sour cream too. One change I made was to use leftover turkey breast that I cut into bite-size pieces. Comfort food at its finest! It doesn t hurt that it s a quick mean to make either. I only had one can of tomatoes and chiles but I did have a can of tomatoes and a can of whole chiles!
