"I thought of this healthy and delicious recipe when my wife was sick and craving a nice flavorful brothy soup to help make her feel better. It really did the trick! She's asked me to make it several times since then."

  1. Heat butter in a stock pot over medium heat; add bok choy, mushrooms, green onions, garlic, and ginger. Sprinkle mushroom mixture with lime juice; cook and stir just until lightly browned, 2 to 3 minutes. Increase heat to medium-high, pour in chicken broth, and bring to a boil. Reduce heat to low and simmer until vegetables are soft, about 5 minutes. Serve with cilantro.

  • Cook's Notes:
  • My wife and I like the mushrooms in a little bigger chunks but you can cut or slice them any size you like or leave them whole. Portobello mushrooms would work well for this recipe, too.
  • If you want a thinner, less robust soup, try adding a little water. My wife and I however felt it took away from the great flavor of this soup.

This was excellent. I only omitted the cilantro and put the green onions on top when it was done. I am on a keto diet so I added some heavy cream at the end. Will definitely make this again.

This was an absolutely delicious recipe! I would definitely make it again. If you wanted to add a little more to the soup, I think tofu would be a nice touch.

I used two limes and may of had to much, after I got past the pucker of the lime juice, it was great! I didn't have green onions, was not going out to get more. But it was real good and filling!

One of my favorite soups to make! And you can't really mess it up!
