Classic Cauliflower au Gratin


Yummy, cheesy cauliflower. Very easy to make with a little kick.

  • 1 large head cauliflower, cut into bite-size pieces

  • 1 cup light sour cream

  • 1 cup shredded Cheddar cheese

  • ½ cup diced onion

  • 3 tablespoons melted butter

  • 2 tablespoons red pepper flakes, or to taste

  • ¼ teaspoon salt

  • ½ cup panko bread crumbs


  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Bring a large pot of water to a boil. Add cauliflower and cook uncovered until tender, about 10 minutes. Drain.

  3. Combine sour cream, Cheddar cheese, onion, melted butter, red pepper flakes, and salt in a baking dish. Mix in cauliflower. Sprinkle bread crumbs on top.

  4. Bake in the preheated oven until bubbly and cheese is melted, about 30 minutes.

Cook's Notes:

Substitute a buttery spread (such as Smart Balance(R)) for the butter if desired.

Substitute 2 tablespoons minced onion for the diced onion if preferred.

Substitute Parmesan cheese for the Cheddar cheese if preferred.
