  • Preheat oven to 375 degrees F.

  • Scoop out pulp of zucchini and chop. Heat oil in medium saucepan over medium heat and cook zucchini pulp, stirring occasionally, until tender, about 2 minutes. Stir in water and Knorr® Fiesta Sides™ - Mexican Rice. Bring to a boil. Reduce heat to low and simmer covered 7 minutes or until rice is tender.

  • Arrange zucchini on baking sheet. Evenly fill with rice mixture. Sprinkle with cheese. Bake 25 minutes or until zucchini are tender.

This was a great way to use extra zucchini! I used an ice cream scoop to scrape out the pulp and I removed 30 seeds before chopping and sautéing. I added chopped onion and maybe 2 tsps of garlic powder that I cooked before adding the pulp. No salt needed and Cheddar & mozzarella worked beautifully. Looked (and tasted) great! Read More

Awesome!!! I did add some black beans and corn and finely chopped kale to mine for added nutrition and fiber. After baking I topped it off with a big dollop of Greek yogurt...yum!! I will be making this again and again while my garden is producing my yellow zucchini. Read More
