It is not ready in 30 minutes. I sadly have to start eating healthy. My diabetes is taking over. I made this yesterday and my wife and I just loved it. The ingredients were easy to find at Kroger and it was an easy recipe. They were finished in 20 minutes at 375. Needed a few pinches of salt but nothing else.
Awesome!!! I did add some black beans and corn, and finely chopped kale to mine for added nutrition and fiber. After baking I topped it off with a big dollop of Greek yogurt...yum!! I will be making this again and again while my garden is producing my yellow zucchini.
This was a great way to use extra zucchini! I used an ice cream scoop to scrape out the pulp, and I removed 30+ seeds before chopping and sautéing. I added ½ chopped onion and maybe 2 tsps of garlic powder that I cooked before adding the pulp. No salt needed and Cheddar & mozzarella worked beautifully. Looked (and tasted) great!
This was delicious!!! I added sour cream to the rice mixture as well as shredded cheddar and shredded mozzarella since I didn’t have the cheese the recipe called for.

I made this with rice and beans. My husband and 4 year old loved it! Super easy and I will he making it again.
I didn’t have any Mexican rice so I just used normal already cooked white rice. To give it a little kick I added salt, pepper, and maybe a teaspoon of chili powder. Then on top of the cheese I added my own Italian seasoning. It turned out pretty good and flavorful!
