Meringue Springerle Cookies
A lighter, crisper version of springerle, made with egg whites. Store in airtight containers in the freezer. They will keep for months and improve with age.
Replace 1 tablespoon vanilla extract with 2 teaspoons vanilla sugar if desired.
A 'duster,' a spoonful of confectioners' sugar tied in a piece of cheesecloth, is recommended for dusting the work surface and top of the dough.
After pressing the mold into the dough, it can help to flip the mold and use a rolling pin to press on the dough for deeper impressions.
