  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine hominy, garlic, and jalapeno in a saucepan. Bring to a boil, reduce heat, and simmer until hominy is tender, 15 to 20 minutes. Strain out liquid and pour hominy mixture into baking dish. Stir sour cream and butter into hominy mixture; top with Cheddar cheese.
  3. Bake in preheated oven until cheese melts, about 25 minutes.

I've never had hominy before, but I really enjoyed this dish! It was very east to put together and had great flavor. Hubby also enjoyed this, but the kids, not so much. I liked that this didn't...

Served it with pork chops, green salad and roasted asparagus last night to guests and it was a hit. A new replacement for potatoes.
