Pork Chili Verde (Green Pork Chili)

I can't stop tasting it as it cooks! Made this to use up some pork loin leftovers. I didn't have any coriander so I substituted garam masala mix. Only used 2 1/2 jalapenos and a sprinkle of cayenne. It's the perfect amount of heat for me. I also roasted the tomatillas, peppers, and garlic. A tip: if you roast garlic unpeeled, it's really easy to get out of the shell afterwards.
