  • Scoop the potato out of the skins; combine with sour cream and dressing mix. Fill skins with mixture. Sprinkle with cheese. Bake at 375 degrees F for 12-15 minutes or until cheese is melted. Garnish with green onions and/or bacon bits, if desired.

This is more of a twice-baked potato recipe but is delicious no matter what you call it! It's also very versatile. I add in about a 1/2 cup of red onion and then also liberally sprinkle shredded cheddar-mixed cheese over the pan before putting in the oven. I also cook a lot longer at least 30 minutes to get the tops nicely browned and make sure the skins are crisp. Next time I'm going to try adding in a little heat maybe some buffalo sauce. Read More
