  1. Heat olive oil in a large skillet over medium heat; cook and stir onion until lightly browned, 10 to 12 minutes. Add grated sweet potatoes; cook and stir until tender, about 15 minutes.
  2. Increase heat to high and cook sweet potato mixture without stirring for 2 minutes. Reduce heat to medium and stir in bacon, chives, parsley, thyme, salt, and pepper.

This tastes delicious and is a great alternative to white potato hash browns. Tasted great with an over easy egg and chicken turkey sausage.

Easy to make,better than hash browns, husband came back for seconds.

Yeah, this was a flop for the entire family - the flavors were confused and too savory for a breakfast item. We used prosciutto instead of bacon and dried Thyme and Parsley - otherwise followed...

We really liked this! I'll definitely make it again. It was very easy. I didn't add the bacon because I served it as a side dish.
