- Heat olive oil in a skillet over medium-high heat; add chicken and season with salt and pepper. Cook and stir until chicken is no longer pink in the center, 5 to 10 minutes. Transfer chicken to a plate.
- Melt butter in the same skillet; cook and stir mushrooms and garlic until mushrooms are lightly browned, 5 to 7 minutes. Mix tomato and chicken into mushroom mixture; season with salt. Cook and stir, 2 to 3 minutes. Add spinach and gently stir until wilted, 2 to 3 minutes.

- You can add in Italian seasoning or rosemary to make this more of an Italian dish. You can also substitute roughly 2 teaspoons of store-bought minced garlic for the fresh garlic.

Very easy and tasty with a few changes. First I need to mention this recipe isn't enough for 4 servings it is enough for 2. I added Italian seasoning since another reviewer mentioned it needed...
Perfect for those busy nights, this recipe is fast and easy, and fresh tasting and healthy. The only change I would make is to add more spinach the next time.
