Ginger Garlic Pesto

Rated as 4 out of 5 Stars

"This is a delicious sauce/marinade for almost any type of dish. It's full of flavor and we love it on fish, pasta, or chicken. It's become a staple, such that we make multiple batches and store in the fridge for quick use throughout the week. It tastes better when it's been cooked."

  1. Blend green onions, ginger, garlic, lemon juice, olive oil, and sea salt together in a food processor until smooth and creamy, about 1 minute.

  • Cook's Notes:
  • This works great as a marinade, sauce, or other accompaniment to your dish.
  • For fish and chicken, we brush it across the top and then bake.
  • For pasta, we heat it in a frying pan with a bit of olive oil and any meat (generally shrimp) we want before tossing it with the cooked pasta.

Followed the recipe exactly but it was watery and less flavorful than I wanted.

This is excellent but be warned, a little goes a long way. Certainly not what many would consider 'pesto' but will be perfect used in a marinade.
