  1. Heat the cauliflower, broth and garlic to a boil in a 10-inch skillet over high heat. Reduce the heat to medium. Cover the skillet and cook for 15 minutes or until the cauliflower is tender.
  2. Mash the cauliflower mixture in the skillet and stir in the Parmesan cheese and butter. Season to taste.

Scale back to one cup broth, add two heaping Tblspn sour cream and black pepper. Delicious!

Easy and quick to prepare in the Swanson Broth. I added salt and pepper and a touch of sour cream and pureed using a hand blender. My husband thought it was great!

This was delicious! I used a Parmesan, Asiago, Pecorino blend from Trader Joe's instead of just grated Parmesan...it was a great choice.
