  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Beat sugar and butter together in a bowl using an electric mixer until smooth and creamy. Mix flour, coconut flakes, vanilla extract, salt, and baking soda into creamed butter mixture until dough is smooth. Spoon dough onto a baking sheet.
  3. Bake in the preheated oven until edges of cookies are lightly browned, about 10 minutes.

These were delicious. Simple to make, few ingredients.. good stuff. Only thing... mine did not flatten out and I wanted them to be thin, so make sure you flatten them before baking if you want t...

Turned out perfect! We had leftover coconut that was put to great use in these cookies. Since the butter was already salted, I didn’t mix in the tsp. of salt. Also doubled my cooking time to 20 ...

Broke a Hershey Bar into segments and stuck one in the center of each cookie...Cha-Ching!!!!

I loved this cookie so much, and I am definitely making it again! My only complaint is that the cookies were very buttery and sugary. Other than that, these cookies are spot on!
