  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  2. Mix cake mix, coconut milk, eggs, oil, and water together in a bowl using an electric mixer for 2 minutes; pour into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 35 to 40 minutes.

Cake was delicious! I frosted it with white frosting that I mixed about a tablespoon of coconut milk and a teaspoon of coconut extract and covered the entire cake in sweetened coconut flakes.

It’s delicious- not going to bother with icing.

It was so light and moist. I brought in to my coworkers and it was all gone before lunchtime! Cake is a breakfast food, right??
