  • Whisk 2 cups coconut milk, cocoa powder, maple syrup, vanilla extract, and salt together in a bowl; fold in chia seeds. Transfer mixture to a large jar with a lid; allow to rest for 5 minutes. Alternate gently rotating jar (30 seconds) and resting (4 minutes) for another 20 minutes.

  • Refrigerate chia mixture, 8 hours to overnight.

  • Transfer chia pudding to a bowl. Mix shredded coconut and coconut sugar together in a bowl. Drizzle 1 tablespoon coconut milk over pudding; top with whipped cream and shredded coconut mixture.

Surprisingly good for being so simple! I used 1 can of coconut milk and topped it up to 2 cups with normal milk. I left out the salt and didn't do the whipped cream topping. Really delish! Read More

This "Chocolate Chia Pudding" is the best-chai pudding recipe I have tried to date. I think I could serve it to regular everyday people (not just "health-food nuts") without issue. I did have to double up on the cocoa because I am a dark-chocolate aficionado, and I might be inclined to reduce the maple syrup for more bitterness.
