  1. Combine cucumbers, carrots, onion, sugar, coriander, salt, and black pepper together in a bowl; add vinegar and mix well.

  • Tastes great right when you make it, but letting it sit for at least an hour will blend the flavors best. This is also a great way to use up all those cucumbers growing in your garden.

Made exactly as recipe calls for first time and was a hit , second time ran out of apple cider vinager and used regular white with a bit o lemon balsamic vingar

The cumin is a nice surprise to the dressing. I also added 2 stalks of diced celery for extra crunch. I'll be making this again!
