Egg in a Pepper

Very good idea! I sauteed the pepper rings in a non-stick pan with a little bit of grapeseed oil on medium low heat to soften them before adding eggs. Sprinkled with salt n' pepper and topped with a tablespoon of shredded cheddar cheese. Covered pan with glass lid and continued cooking on med.-low to melt cheese and baste eggs. Turned out perfect!!
