Mint Lime Salmon

 made it  |  0 reviews   |   photos

"This is a great go-to dinner when you don't have a lot of time. The flavors are really zingy, and your eaters will think you spent a long time preparing it. I serve it with brown rice and salad to make a complete meal."

  1. Mix mint, soy sauce, lime juice, ginger, and coconut sugar together in a baking dish until marinade is evenly combined. Place salmon on top of marinade, skin-side up. Marinate in the refrigerator, at least 2 hours.
  2. Preheat oven to 375 degrees F (190 degrees C).
  3. Bake in the preheated oven for 20 minutes. Add water if sauce is getting dry. Continue baking until skin peels off easily and fish flakes easily with a fork, about 10 minutes more.

  • Cook's Notes:
  • I cook salmon with the skin on to ensure a moist, tender fish. It also provides lots of healthy omega-3 fats. Your cooking time may vary, depending on the thickness of your fish.
