Ingredients

  • 2 cups peanut butter

  • 1 (12 ounce) package semisweet chocolate chips

  • 1 (11 ounce) package butterscotch chips

  • 1 teaspoon canola oil

  • 3 cups shoestring potatoes

Directions

  1. Combine peanut butter, chocolate chips, and butterscotch chips in a medium saucepan over low heat; stir until melted, about 15 minutes. Stir in oil.

  2. Remove from the heat and mix in potatoes until well combined. Drop by rounded spoonfuls onto waxed paper-lined baking sheets.

  3. Refrigerate until firm, about 2 hours.
