A simple and delicious way to serve sausage and peppers with a tomato-based sauce. This is one of my husband's and kids' favorite meals. They like it served over rice because it makes a lot of 'gravy' that soaks into the rice. It 's one of my favorites because it's quick, easy, and has only a few ingredients that I usually have on hand.

  • Preheat oven to 400 degrees F (200 degrees C). Spread sausage pieces into a baking dish.

  • Bake sausage in preheated oven until heated through, about 20 minutes.

  • Heat olive oil in a large skillet over medium-high heat. Saute onion in oil until translucent, 5 to 7 minutes.

  • Stir sausage with the onion. Pour tomato sauce over the sausage mixture; bring to a simmer and cook for 20 minutes.

  • Stir bell pepper into the mixture to coat in tomato sauce; cook until the bell pepper is tender, about 20 minutes more.

This recipe needs spices, added garlic, basil, oregano. Cooked the sausage in a pressure cooker which drew out all the fat and left the meat fork tender then added the peppers to the sausage. Read More

I sauteed the peppers and onion for about 10 minutes. Then added the baked sausage and tomato sauce. I then simmered that for about 30 minutes. I also added a clove of minced garlic, oregano, salt and pepper to taste. I would recommend less tomato sauce as it kind of overtakes the dish. Next time I will try one 14.5 oz. can. Served it with fresh bolillo rolls. Final verdict is this is a really good meal and perfect for chilly fall evenings. I liked it! Read More

04-02-16 Loved the ease of this recipe. I had four spicy homemade sausage to use and they were wonderful with this recipe. Delicious! I found cutting the sausages while they were a bit frozen made the process super easy. I only had 5 sausages and I used 1 green pepper and 1 can of sauce...that was perfect for us.
