Quinoa Salad with Grilled Vegetables and Cottage Cheese
For cooked quinoa, combine 1 cup (250 mL) quinoa in a pot with 1 1/2 cups (250 mL) water. Bring to a boil; cover and simmer on low heat for 12 minutes or until water is absorbed. Let stand, covered, for 5 minutes. Fluff with a fork and spread out on a plate to cool.
