I wanted to make chicken enchiladas but couldn't find a recipe that I had the ingredients for. So, I made this up using what I had on hand. It is mildly spicy. Add more peppers/cayenne or hot sauce to liven it up a bit.

  • Melt 2 tablespoons butter in a skillet over medium-high heat; saute onion, jalapeno pepper, chile pepper, and garlic until fragrant and lightly browned, about 3 minutes. Add chicken broth, chicken, chili powder, seasoned salt, cumin, and cayenne pepper; cook and stir until chicken is no longer pink in the center about 5 minutes.

  • Melt 1 tablespoon butter in a microwave-safe bowl in the microwave, 15 to 20 seconds. Stir flour into melted butter until smooth.

  • Mix flour-butter mixture and sour cream into chicken mixture; cook and stir until sauce is thickened, 2 to 4 minutes. Add pepperjack cheese to sauce and stir until melted, 2 to 3 minutes.

  • Spread chips onto a serving platter; top with sauce and pico de gallo.

Due to amount of chicken sold in the market I make this twice a week and have been doing it for months (possibly over a year now). I double the seasoning salt cumin chili powder and cumin. I use Extra Sharp Cheddar (shredded off the block) instead of Pepper Jack cheese. I use a Large Anaheim Pepper and Large Jalapeno Pepper for each serving as well as some extra onion. I use Daisy Light Sour Cream instead of regular and always use Swanson Chicken Broth. For Pico De Gallo I seed 1 Large Jalapeno and 5 Large Roma Tomatoes and dice them up along with about Half a Medium Yellow Onion diced and about a Quarter Cup of diced Cilantro. I layer chips on the plate and put the mixture then Pico De Gallo then continue until all the mixture is gone. Read More

It work with out the Cayenne and Chilli powder I used a large Jalapeno. " tip I got Jalapeno on my face after washing with soap peroxide rubbing bread on my face finally found out that a fresh cut lemon worked. did leave a little warm but the burn was gone". Read More
