Enjoyed this easy dish and will make again. Served with slow cooker cilantro lime chicken, chipotle barbacoa, black beans pico do gallo, guacamole, etc. etc.
Will make again!!! It was simple to put together and tasty. I used every day white rice because it's what I had and didn't compromise the recipe.

This was great! I made it to jazz up our usual taco night. Due to weeknight rush, I skipped the corn and green onion but I'm sure that would be even better. It was still good without it!
I made this recipe and it was so easy and delicious. I read the other reviews so I knew I could sub for the rice I had on hand. I used Rice Select Royal Blend. It has Texmati white, brown, wild and red rice. It was yummy. I also added the entire can of corn cause what the world was I gonna do with the rest of it? Hahaha. I plan to double or triple the recipe next time. It was that good!
Wonderful! Full of flavor, wasn’t sure about adding the corn, but it added a nice extra texture and flavor to the rice.

Oh My Goodness! This is so good! I made it as is (minus lime zest, as I didn't have a good lime) with blackened tuna and mango salsa, and it was as good as any restaurant's. YUM!

This is such a go-to with so many different meat dishes. I omit the onions and corn and it goes great with oriental dishes.
This is an excellent recipe! Thank you for posting this! I made this with the Black Bean Tacos on this site. Great for a side dish or as the base for a rice bowl which I did with the leftovers. The only thing I did differently was that I didn’t add the corn. It was only because I forgot to add it. It doesn’t need it but it will probably be even better with it. This is going in my regular rotation!

I wouldn’t exactly call this “easy”. The prep took quite a while.Plucking and chopping cilantro takes time, as does zesting the lime. Watch your rice. It took me about 12 minutes to simmer it. This is a great way to cook rice!

husband loved it! i added a tbsp of unsalted butter & a tablespoon of trader joe's cowboy salsa instead of corn.
I used fresh corn so tossed it in with the chicken broth. Made Amy's Cilantro Cream Sauce to be used with instant burritos (:0) and it made a delicious meal! One can of the regular Swanson's Chicken Broth was the perfect amount. Will be making this again!

Great rice side dish that's simple to make! It has a nice mix of lime and salt flavor, plus we love cilantro. We served it with grilled sirloin and veggie kabobs. We made it as is, except without the corn as we didn't have any at the moment.
I think this is going to be my new favorite rice. The flavor is simply delicious.
I loved this recipe! I did not change it but I served it as a rice bowl topped with thin sliced sirloin marinated in lime juice and cumin sauteed and placed atop the rice. I garnished with some other veggies. This could be done with chicken or shrimp.
Very simple and FULL of flavor. Can be easily tailored to your own taste, but very good as it is. Has a nice clean taste that will compliment any Latin dish.

So Delicious! I used white rice, 1/2 tsp of salt(fear of over-salting), and probably slightly less cilantro because I did not measure it; I just grabbed a bunch. I did need 1 3/4 C liquid and about 17 mins to steam the rice, but that's just me! Next time I will probably add beans of some sort just to compliment.
What a delicious rice. I didn't have any chicken broth so I used plain old water. Also, I'm not a fan of corn so I didn't put any either. Even so, it was fragrant and full of flavour! I'll certainly try to use broth next time. Thank you for the recipe
Really good added a fresh jalapeño into the rice while cooking to add some spice had it with fish tacos and corn salsa and mango salsa with avocado slices on top
This is so good!! Goes great with fish of any kind. I cook it up all in my instant pot. Saute the rice and garlic on “sauté” mode then add the chicken broth, salt and lime juice. Put it into “Rice” mode and it’s good to go. Add the zest and corn at the end. Love it!
Easy dish and really can taste the lime which most rices you cannot
I made this recipe for 30 people and baked it in a roaster in the oven for 45 mins at *350. Turned out great!
I made this to go with Taco pie, it was delicious!! I didn't have any corn on hand but made no changes to recipe. I served black beans over it, everyone loved it. But it has enough flavor to stand alone! This will be my go to for rice with any Mexican dish I make! Thx!
This is a nice change from regular rice or potatoes. I made it with Grilled Teriyaki Shrimp and Pineapple Skewers. What a nice summer dinner! I would reduce the cooking time from 15 min to 12 or 13 min, depending on your stove. Will make it again!
