  1. Heat olive oil in a saucepan over medium heat. Cook and stir rice and garlic in hot oil until fragrant, about 2 minutes. Stir chicken broth, lime juice, and salt into rice; bring to a boil, reduce heat to medium-low, cover the saucepan with a lid, and simmer until rice is tender and liquid is absorbed, about 15 minutes.
  2. Stir cilantro, corn, green onions, and lime zest into rice until well-mixed.

Enjoyed this easy dish and will make again. Served with slow cooker cilantro lime chicken, chipotle barbacoa, black beans pico do gallo, guacamole, etc. etc.

Very tasty. Just the perfect lime taste. I particular like my rice white so next time I am going to use half chicken broth and half water.

Very good, quick and easy.

Delicious and easy to make.

I was looking for cilantro & lime rice and this one is good. Thanks!

This was great! I made it to jazz up our usual taco night. Due to weeknight rush, I skipped the corn and green onion but I'm sure that would be even better. It was still good without it!

Wow! Absolutely love rice and now this is by far my favorite rice dish! I took the posters advice and had this with the tequila chicken and the family has a new favorite dinner! Thanks, great re...

Very easy, very good! Beats the restaurant version hands-down!

Best rice ever!!! LOVE IT!!
