A flourless banana pancake recipe I tried was mushy and difficult to flip. I adjusted the recipe and these came out puffy and light like traditional pancakes, though they contain no wheat flour, added sugar, or milk. Kids love the subtle banana flavor, too. Serve with butter and syrup of choice.

  • Blend banana, eggs, oats, and baking powder in a blender until smooth, about 45 seconds.

  • Spray a griddle or skillet with cooking spray and heat over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

Cook's Note:

The kids in my household enjoy regular maple syrup, but they really love homemade strawberry or other fruit syrup with these pancakes.

I read all the other reviews and made the changes they suggested: 1/2 cup of oats + vanilla. I also added peanut butter powder, protein powder, ground ginger, cinnamon, nutmeg, and cloves. It was like a way easier version of banana bread! So delicious! The extra oats and powders made the batter just the right consistency. My husband can smell a "healthy" recipe a mile away and doesn't like me to step away from traditional pancake recipes but LOVED these. Read More

This is a way more successful than other "banana pancake-flourless" recipes I have tried...they were good to me and my toddler, the hubby started out feeling ok about them then said the texture on the inside is a little off but the flavor was there. They are very moist on the inside but outside is very normal and easy to flip. Added a pinch of salt, and a little cinnamon. Next time I will add alittle more than 1/3 cups of Oats and see if inside gets a little less soggy. Update: 1/2 cup of Oats (ground finely before adding other ingredients) really made a great difference. I make these regularly now! THANKS! Read More

These are absolutely fantastic for a super simple and very healthy recipe. They are what they are meant to be - a high protein high fiber recipe without wheat or milk. If you can't have milk or wheat these will make you very happy. I added 1/2 cup of quick oats instead of 1/3 as indicated by another reviewer and these were not mushy by any stretch of the imagination! Keep in mind these are not made with the traditional ingredients of regular pancakes so don't expect them to taste like regular pancakes! OH MAN....these are delicious!!! i only made a couple of minor changes. no baking powder as i was all out and i increased the oats to 3/4 cup and i added fresh blueberries. i used coconut oil in my cast iron skillet to cook these little beauties! Once it was mixed up in the blender i let the batter sit for a few mins. to thicken up a bit then added the blueberries just before cooking. They are so delicious no maple syrup is needed although i did drizzle with some pure Canadian maple syrup! i will definitely be making these again. These were great! Super simple to make and they even rose a bit like regular pancakes do which I loved. These are not very sweet at all so keep that in mind. I served these w/ butter banana slices and cinnamon syrup. I think I would add a bit of vanilla to the batter next time but other than that these are a keeper YUM! Thanks for sharing.:) Read More

Great recipe:). I tried another recipe on here that did not have the oats and let me just say that the oats in this recipe makes all the difference!! I used 1/2 cup of oats like almost everyone that reviewed this recipe. I made perfect pancakes and you can't even tell the difference!! Easy to flip & I even used the batter in my waffle maker.
