I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.

  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.

  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.

  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.

  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.

DELICIOUS! Very easy to make. I refrigerated them overnight before cutting them and dusting them with powdered sugar...they cut beautifully and taste really REALLY good. I don't think I will make these again they turned out pretty sour and they were very greasy. They fell apart I may have made the recipe wrong but I am sure that I followed the instructions properly. Read More

These are great but I did make a couple tweeks because I had to discard the first batch. First I added 1/2 cup flour to the crust. It seemed to hold together a little better. The second thing I did was increased the temp to 350 for the first 15 minutes then turned down to 325. I baked for 30 minutes. The reason is the first batch was a gloppy mess. It just wasn't anywhere near done and my oven runs a little hot. Read More

Yum! Took another cook's suggestion and doubled the custard filling but this requires a longer cooking time. Next time I will still double the filling grease the pan really really well and reduce the oven temp to 325 degrees sooner. Probably half the baking time at each temp guessing 30 minutes each.
