  1. Preheat oven to 425 degrees F.
  2. In a small bowl, combine basil, oregano, cumin, salt and pepper; mix well.
  3. Place vegetables in bottom of a roasting pan, sprinkle with half of the seasoning mix; add oil and toss to coat well.
  4. Season chicken legs in a large bowl, with remaining seasoning, toss to coat well.
  5. Place chicken legs on top of vegetables in roasting pan; cover with aluminum foil; bake in oven for 20 minutes.
  6. Add Clamato(R); cook an additional 40 minutes (chicken is cooked when meat is fork tender).
  7. Serve with rice or salad.

Meh. The sauce is a bit bland. It does take a lot longer to cook. I uncovered and turned up oven to 475 at the end to get chicken brown. Veggies don't cook very well. Skip.

Very easy to make, need to cut vegetables up kind of small and put in a big pot, I used my turkey pan, and it takes way longer than it says, I actually cooked it for 2.5 hours and the meat falls...

I did not use the vegetables, just the spice mix and clamato with the chicken. I will be making this again...excellent taste!
