Smoky Gouda Cheese Dip

"Oh my gosh, is this good! Rich and savory with just a little bit of heat. Even if you've never been a Gouda fan, this will make a believer out of you. I can't bring it anywhere without people begging for the recipe. Serve warm with baguette slices, crackers, or pita chips. Give it a try!"

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix mayonnaise, smoked Gouda, Gouda with chipotle peppers, onion, and bacon together in a bowl; spread into a baking dish.
  3. Bake in preheated oven until mixture is bubbly and lightly browned along the edges, 15 to 20 minutes.

  • You can also heat this in a microwave oven until bubbly, 3 to 4 minutes, and then throw under the broiler set to Low to brown, 3 to 5 minutes more.

This sounds wonderful as Im a Gouda freak! Im going to use less onion and make sure bacon isn't greasy, after reading reviews. Will update after I make, bet its dynamite!

First time making this dish, took it to a family gathering and it disappeared! Very good!! Now the bad part is I have to share the recipe.

Pretty good! I took another reviewer's advice and used some garlic, too. Am looking forward to adding spinach next time!
