  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x5-inch loaf pan.

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 10 to 15 minutes.

  • Heat olive oil in a skillet over medium heat; cook and stir onion, sweet potato, kale, and red bell pepper until tender, 10 to 15 minutes.

  • Combine buffalo meat, eggs, Worcestershire sauce, garlic, ketchup, salt, black pepper, oregano, basil, and thyme together in a bowl. Add vegetable mixture and quinoa to buffalo mixture and mix well. Transfer mixture to the prepared loaf pan; top with a thin layer of barbeque sauce.

  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Cook's Note:

Substitute tomato paste for ketchup, if desired.

WOW! We loved this! Used turkey instead of buffalo and it came out so moist and flavorful! It became surprisingly sweet with the sauteed veggies. I have made this a few times now... forgot the eggs and it still came out great. Sometimes I throw in grated zucchini and carrots. Also, sometimes I substitute uncooked whole wheat couscous for the quinoa, it soaks up all the moisture from the veggies and low-fat turkey and keeps it nice and moist! Read More

This is ridiculously tasty! I doubled the Worcestershire and loaded up on the herbs. In a convection oven it only took 50minutes. My dinner guests loved it and asked for the link to the recipe. It's a keeper. Read More

This was a delicious alternative to regular meatloaf. I used ground turkey. I used buffalo wing sauce instead of barbecue sauce added chopped jalapeños increased spices and a bit more kale. We like spicy hence the jalapeños. I will definitely make this again. My husband loved it! Read More

We made this even though there wasn’t very many reviews. We use 12 oz of ground buffalo- it’s not very expensive at our local supermarket. This was the best meatloaf I have ever had. My husband declared it his favorite meal EVER, so it was a hit. I did use a tap of all the spices instead of a pinch and it was great. SO GOOD!!! Even my kids liked it! Read More
