This was my mothers recipe, and named by my son because it is so addictive. By replacing the Jell-O® with sugar-free Jello-O®, using no-sugar-added pineapple, and your choice of sugar substitute, this turns into a reduced-carb recipe. If you don't have a grinder, use a blender and water to grind the cranberries, then drain.

  • Process cranberries and orange in a food processor until finely ground.

  • Stir boiling water, sugar, and gelatin together in a bowl until gelatin and sugar dissolve. Add cranberry mixture and pineapple with juice; stir. Pour into a 8-inch square serving dish, cover the dish with plastic wrap, and refrigerate until set, about 45 minutes.

Good recipe, but next time I make it I will omit the sugar. I used sweetener instead of sugar but it was still very sweet. Also may need to use a pack of unflavored gelatin to help set. Recipe as it is, is very loose. Read More

Well received at family Christmas. Nice that it doesn't have to chill overnight. I used 8oz. can of crushed pineapple so it set up better. Think I used a 3 oz. box of raspberry jello and a 3 oz. box of cherry jello. Yummy! Read More

I ran a navel orange (peel and all) through the food grinder with my cranberries. I used raspberry gelatin. To make it healthier, I use one 3 oz. pack of raspberry gelatin and one 3 oz. pack of sugar free gelatin. Also I used only 3/4 cup of 1/2 sugar and 1/2 Stevia since I am diabetic. i don't like the aftertaste of artificial sugar so right now I use 1/2 regular and 1/2 Stevia in my recipes.
