"I made this for Christmas, and one of my guests said the carrots were 'off the chain!' The flavor was amazing! The cheese was nicely crusted combined with the carrot and a little garlic! YUM! A nice change from the ordinary green veggie and still healthy!"

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  2. Stir olive oil and garlic salt together in a small bowl; pour into a large resealable plastic bag. Add carrots to the plastic bag, seal, and shake to coat carrots completely in oil mixture. Arrange coated carrots onto the prepared baking sheet.
  3. Roast carrots in preheated oven until crisp-tender, about 45 minutes. Sprinkle 1/4 cup Parmesan cheese over carrots and continue roasting until cheese is lightly browned, 5 to 10 minutes. Garnish with additional Parmesan cheese to serve, according to your taste.

Footnotes

  • Cook's Note:
  • The carrot may be cut smaller or baby carrots used, remember to watch cooking time, as it will be decreased due to carrot size.
  • This can be made quicker by pre-cooking the carrots half-way and then roasting the last half. Roasting the carrots give the carrots a great, full, and wonderful flavor!
  • Tip
  • Aluminum foil helps keep food moist, ensures it cooks evenly, keeps leftovers fresh, and makes clean-up easy.

These had no flavor, but I did use real Parmesan which is all I had, they might be better with the stuff you buy in a jar.

Made this for an Easter dinner side. Everyone loved it! I prefer my carrots soft, so I steamed them and then followed the recipe. Roasting time was shorter since the carrots were already cooked.

Really, really excellent and easy! Like some other reviewers, I just tossed the garlic salt and oil together with my hands on the pan, not using the plastic bag method called for in the recipe....

this recipe is quick, easy and YUMMY!! since I like my veggies crispy next time I'll only cook 30-35min.. also I eliminated the extra step of tossing them in a baggie and just mixed them in a la...

Easy and a big hit with my husband, who doesn't usually like cooked carrots. I added some garlic powder and used butter-infused olive oil. The parmesan was the best part.
