This is a favorite of ours in the summer. Also great made with shrimp in place of chicken!

Directions

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Drain and rinse with cold water.

  • Stir pasta, chicken, green bell pepper, eggs, Parmesan cheese, and red onion together in a bowl. Pour salad dressing over the top and toss to coat. Cover the bowl with plastic wrap and refrigerate until chilled and flavors blend, at least 2 hours.

With added my added changes.......I'd give a 5 star rating. I made this "as instructed" a couple of months ago. For me there was too so much pasta that it was dry and you couldn't even taste the onions peppers etc. I salvaged my salad by pulling out a lot of the pasta and adding additional onions bell pepper kalamata olives and additional dressing for taste and moisture. With these changes.......I'd give a 5 star rating. Read More

This was yummy! I loved how easy it was to throw together and how it did not get dry like some of these types of salads do upon sitting in the fridge. I used rotini pasta but that was my only change. Great flavor and the whole family enjoyed it. I would even make this w/o the chicken if I didn't have any on hand. A definite keeper YUM! Thanks for sharing.:) Read More

I made as is except with rotini spiral pasta. The pasta to chicken ratio was fine but I'm glad I had a full bottle of caesar salad dressing as it needed the whole thing. I felt it needed more crunch too. I added more onion and pepper but wished I had celery on hand. Last like so many others have noted it was a bit bland. Next time I'll experiment with oregano and other herbs/spices. Read More
