We enjoy using leftover ham for salads, egg dishes, and other meals. This makes a healthy dinner for two. It's ideal for low-carb diets. Garnish with olives, tomato, and other favorites such as radish or peperoncini (mild yellow peppers called 'friggitello' in Italy), etc.

  • Mix ham, celery, and red onion in a large bowl; add mayonnaise and rosemary and stir to coat.

  • Refrigerate ham mixture for at least 1 hour.

  • Put lettuce into a large bowl. Spoon ham mixture over the lettuce. Serve with ranch dressing on the side.

Cook's Notes:

Serve with your favorite salad dressing. I prefer ranch dressing, while my wife enjoys Caesar.

You can use whatever type lettuce you like.

This was delicious but I did adjust the measurements according to our tastes. I can't say that I really 'measured' anything but I did use less celery and onion than called for and 1/2 of the rosemary as it can be strong for us. Also I wanted to serve this on sandwiches so I did not use the lettuce leaves but I did drizzled the ham salad w/ ranch dressing before serving which gave this a nice extra layer of flavor. I'm used to making my ham salad w/ only ham relish pepper and mayo so this was def a nice change and one I will be making again YUM! Thanks for sharing.:) Read More
