My grandma used to make this carrot salad all the time and I loved it. Now I make it to honor her and it's almost as good as hers.

  • Mix carrots and raisins together in a large bowl. Whisk mayonnaise, lemon juice, and salt together in a small bowl until smooth. Pour lemon juice mixture over carrot mixture and stir until carrots are completely coated. Refrigerate until chilled, at least 30 minutes.

The lady at the deli counter LIED when she said this salad was difficult to make. Simple and delicious. Best when it gets a chance to it a few hours, so the raisins can absorb some of the juicy goodness. DEFINITELY will make this again! Read More

This is my go to recipe for carrot salad. Depending on my mood I prepare it as written or jazz it up by adding additional ingredients like hulled sunflower seeds, pineapple, diced apple, or coconut. I soaked my raisins in Lemon Juice and Water to plump them and used Mayo AND Miracle Whip to add sweetness. I also used a little dijon mustard to give it a kick. Read More

I did not have enough raisins so I added some dried cranberries to make up the difference. Also added more mayo than called for; I like carrot salad on the creamy side. And for good measure I added a squeeze of honey for a bit more sweetness. Love the salad. Read More
