  • Preheat oven to 425 degrees F (220 degrees C).

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover the saucepan, and steam cauliflower until tender, 2 to 6 minutes.

  • Melt butter in a saucepan over medium heat. Cook onion in butter, stirring regularly, until caramelized, 15 to 20 minutes. Remove saucepan from heat. Stir Cheddar cheese, tofu, cream cheese, garlic powder, white pepper, mustard powder, and sea salt with the onion; add steamed cauliflower and ham and stir. Transfer the mixture into a casserole dish. Sprinkle Parmesan cheese over the top of the dish.

  • Bake in preheated oven until heated through, about 10 minutes.

In the spirit of an honest review, I cannot get behind tofu no matter how hard I try, so I omitted it and used 4 cups of cauliflower instead. With that said, I prepared the recipe as stated. I thought the flavors went well together and I will serve this again. Read More

I will try this again as the texture was pretty good and the flavors melded nicely just a bit too much garlic powder for my liking. Maybe try cutting that in 1/2. Otherwise a good low carb option. Read More

Really was surprised at texture and flavor really pleasing. I didn't have ham available but used Canadian bacon instead. I can see some other ways to try it this will be my replacement for mac and cheese in order to save carbs' Read More
