  • Preheat oven to 375 degrees F (190 degrees C).

  • Put mustard in a large bowl. Slowly pour oil into mustard while continuously mixing to form a smooth sauce; stir in shallot and garlic. Add cauliflower to the mustard sauce and stir to coat. Pour coated cauliflower onto a baking sheet, scraping out any shallot or garlic stuck to the bowl and sprinkling over cauliflower.

  • Bake in the preheated oven, stirring 2 to 3 times, until cauliflower is tender, about 45 minutes.

Cook's Notes:

After washing, dry cauliflower thoroughly or else the sauce won't stick well. Cauliflower pieces will shrink considerably while cooking.

Add fresh dill or another herb to give it a new twist.

This was amazing! I did more of a 50/50 mix. Added a little dried tarragon and a sprinkle of hot pepper flakes. It was so delicious. I didn't have shallot so I just used some onion. I only used a pinch of S&P because it doesn't really need it because of the mustard. I'd swear that there were bread crumbs and parmesean cheese added but there is not. It's that good. My hubby would like to try it with bacon next time. Thanks! We'll see. Read More

For my personal taste I'll add more dijon mustard the next time but we enjoyed this. Watch your time as mine was done in 30 minutes. Very nice side dish. Read More

I will definitely add more dijon mustard or less oil the next time I make this. I used yellow onions (did not have a shallot) and since I love garlic I used 5 cloves of garlic. Mine was also done in 30 minutes. Read More

Yummy. I usually just roast my cauliflower with olive oil salt and pepper and maybe some garlic - but this was a nice change. I might like even a little bolder Dijon flavor so I may consider either increasing the dijon or cutting back on the oil to make that flavor come thru even more. I did have shallots in the house - but if you don't I'm sure a little onion or even the dried minced onion would be a fine substitution. Read More
