  1. Mix flour and baking powder together in a small bowl. Mix milk, egg, and 2 tablespoons vegetable oil together in a large bowl. Stir flour mixture into milk mixture until batter is smooth. Set aside to allow batter to thicken, about 1 minute.
  2. Heat about 1 teaspoon vegetable oil in a skillet or griddle over medium heat. Drop batter by large spoonfuls onto the griddle, add blueberries, and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining oil and batter.

Awesome! Pancakes cooked perfectly! I would like to make a bucket version soon.

I made these and for some reason they were extremely thick and felt like there was way too much baking powder? I am not sure because I made a large batch and they were very dense and I had to ad...

I only used 1 TBS of oil. The dough was extremely thick, so I added 1/2 cup more milk. We do not use whole milk, so I substituted half and half. And they are good without any sugar!

So I kept the measurements the same, but substituted whole wheat flower, coconut oil, and almond milk. Easily the best pancakes I've ever made. The batter didn't cling to anything like it usual...

They were very good but pretty thick and cakey. I added some vanilla to the batter, but wished I had added about a tablespoon of sugar as well. I would make them again with those additions.

I know so many of you don't like it when we review a recipe that we made changes to but that's how a lot of us cook. I look at the recipe as a base to work from. I didn't want to use a recipe wh...
