  • Preheat oven to 375 degrees F. Combine all-purpose flour, whole wheat flour, sugar, pumpkin pie spice, baking soda, salt and baking powder in medium bowl. Whisk together pumpkin, apple, oil, egg and vanilla in a large bowl. Add dry ingredients, mixing just until moistened. Stir in cranberries and flax seed. Portion into greased muffin cups or use paper liners. Sprinkle with walnuts.

  • Bake for 20 to 25 minutes or until wooden pick inserted into center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan.

Tips

* Or substitute golden raisins or chopped dried apricots.

Yield: 12 muffins or 32 mini muffins

Instead of corn oil, I used vegetable oil. I did not have flax seed, I just increased the nuts just a touch. I also used my own spices to make pumpkin pie spice. Very moist muffin, my whole family really liked the combination of the pumpkin, apple, dried cranberries and nuts. This is quite different but in a good way. All the diverse textures was lovely. These muffins are delish! Packed with flavor and fairly good for you too. I made them a little healthier by replacing half the oil with applesauce, cutting the sugar to 1 cup (could probably cut it even more), using 1 c. ww flour and 3/4 white flour rather than vica versa. I also left out the walnuts, but used a little more dried cranberries. The whole family loved these. Read More

Ooh yummy! I used homemade pumpkin purée and had no flax seeds (I put some wheat germ in there for kicks). The only other change I made was by accident; my nephew was fussing as I was loading up the pan, so I forgot the walnuts :) The recipe made 12 good sized muffins with enough extra to do 11 mini muffins (I did remember to sprinkle nuts on that pan!). They come clean out of the paper wrappers, for some reason I have trouble with that, but these were nice and clean and delicious. The mini muffins I used non stick spray on, and they popped out with no trouble. The cranberries are awesome, I would like to try the golden raisins suggested next. :) Read More

Followed this recipe exactly and these were almost all gone at breakfast! My 16 year old, his girlfriend, my hubby, and our 13 month old all gave these a thumbs up. Super tender and moist, good flavor, and great add-ins. Definite keeper! Read More

I liked this muffin. It makes a great morning muffin, as it is hearty and filling yet still soft with a nice flavor. I made a few changes based on what I had in the house. I only had pumpkin pie filling instead of 100% pure pumpkin. So, I reduced the sugar by 1/4 cup and the pumpkin pie spice by 1/2 tsp as it already has both. I don't typically see muffins recipes, with a dozen muffins, with over 1 cup of sugar anyhow. I used flaxmeal instead of the seed out of preference. I chose the optional golden raisins over the dried cranberries. I had 1/3 cup left and I thought it was the perfect amount. I also peeled the apple and did a small chop with it in my Vitamix blender on speed one. I liked that it could still be tasted versus having shredded it. That also saved time. The flavor worked well with the golden raisins. I thought they tasted a little more like apple than pumpkin, but that was no big deal. The walnut garnish was a nice addition. They took 27 minutes to bake and I just sprayed the muffin pan lightly with cooking spray and they came out of the pan with ease. I would consider this recipe again, in the fall, for a breakfast muffin. ty Read More

I reduced the amount of sugar, used the applesauce instead of oil, added whole can of pumpkin, used white and wheat flour and didn't add the crumb topping. The muffins were wonderful!! Read More

I have tried several other apple and apple/pumpkin muffins recipes from this site, but was disappointed, so the search had to continue. This recipe didn't look all that different, but it must have been because these were excellent. I was out of linseed, so I substituted a pinch of wheat bran. Also substituted olive oil. No walnuts, as hubby can't eat them. I generally have some struesel topping in the freezer, so put a sprinkle of topping on them before baking. Thanks!
