  • Heat olive oil in a saucepan over medium-high heat; saute onion, tomato, and garlic until softened, about 10 minutes. Stir fava beans, lemon juice, cumin, and turmeric into onion mixture; cook until heated through, 3 to 5 minutes. Stir tahini into fava bean mixture and cook until warmed, 2 to 3 minutes; season with salt and pepper.

  • Pour fava bean mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

The only change I made was to fry my onions to th transparent stage. We 'popped' all our own Fava beans, having been given them by a friend...we were kind of cursing her as we did it and really hoped this recipe lived up to all the reviews! Not disappointed at all....well except that our son came for lunch and ate most of it. Read More

This was a nice dip. I had never tried favas before. They have a nice sort of earthy taste. I found out I am not a big fan of tahini so after I made this I added a little plain Greek yogurt. For my tastes I liked that addition. Read More
